Steal with anything reasonable, at a normal size
Do not shrink your raise to steal cheaper: the nit's defense decision is hand-based, not price-based, and the smaller size only improves the blinds' odds the rare times a real hand wakes up. Your standard open with the top 60 to 70 percent of hands prints from the button against nit blinds.
When they call, downgrade everything
A nit cold-calling from the blinds holds real cards: big broadways, pairs. Your steal hand just became a small-pot hand; c-bet boards that favor you once and shut down without improvement.
When they 3-bet, congratulations, you found aces
Fold your steals and lose the minimum. The steal profits live in the folds; paying off the once-a-night 3-bet with a stubborn call refunds hours of theft.
